I’ve been craving peanut butter cookies for the past couple of weeks, so last night I finally decided to give in to my craving, but to put a healthier spin on the traditional cookies.

Ingredients:

175g peanut butter

1 Tbs flaxmeal

3 Tbs water

3-4 Tbs wholemeal self raising flower

1 Tbs Natvia (or any sweetener you prefer)

1/2 tsp baking powder

1 tsp vanilla bean paste or essence

Method:

Mix the flaxmeal and water, then add all the other ingredients and stir to combine.  Scoop teaspoons of mixture into balls and place on a lined baking tray.  Push a fork down on the top of each ball to flatten into a cookie shape.  Bake in a preheated oven at 180 degrees celcius for 10-15 minutes.  Cool on the tray for a few minutes and then move to a wire rack for further cooling.
